Ingredients:
- 4 (about 400g) wedges watermelon, seeds removed
- 1 small red onion, peeled, cut into wedges, root end intact
- Light olive oil spray
- 2 tbs extra virgin olive oil
- 1 tbs red wine vinegar
- 125g (1/2 cup) drained marinated feta
- 2 tbs pistachio kernels, chopped
- Young parsley sprigs/micro parsley, to serve
Preparation:
Heat a lightly oiled chargrill on
high heat. Cook the watermelon for 1 minute each side or until lightly
charred. Transfer to a plate. Add red onion to the grill. Spray with
oil. Cook, turning, for 10 minutes or until charred.
Combine the extra virgin olive oil and vinegar in a small jug. Season with pepper.
Arrange the watermelon, onion, feta, pistachio and parsley on a plate. Drizzle with the dressing
